Dandelion Chocolate

Dandelion Chocolate has been making bean-to-bar chocolate in San Francisco's Mission District for over a decade. They work exclusively with two ingredients: single-origin cocoa beans and organic cane sugar, leaving out the cocoa butter, lecithin, vanilla, and other additives common in most chocolate production.

Their approach centers on sourcing well-fermented beans and roasting them to bring out the distinct flavors of each origin. The team travels regularly to meet the producers who grow, ferment, and dry their cocoa, building direct relationships that let them select beans with the most distinctive character. Visitors to their San Francisco factory can watch chocolate makers at work and see the melangers spinning batches of chocolate from bean to bar.
