Counter Culture worked with Origin Coffee Lab starting in 2019 to source from these communities, whose coffees had previously disappeared into large commodity blends without recognition. The result is a cup profile with pronounced fruit character—think dark cherry sweetness balanced by the crispness of white grape.
Colasay sits in the southwestern part of Jaén, an area that until recently produced coffee destined for bulk processing rather than single-origin offerings. By focusing on individual farming communities in this district, Counter Culture surfaces coffees that would otherwise never reach specialty roasters. La Viuda represents a selection of this year's harvests from those producers, blended to showcase the region's distinctive fruit-forward profile.
Light roasting preserves the beans' natural acidity and lets the fruit notes shine.
