This coffee comes from a farm established in 2010 on the slopes of Guatemala's Acatenango volcano. Max Pérez and his wife Claudia planted their first trees after years of working in the coffee industry, choosing a location where mineral-rich volcanic soil supports a variety of cultivars. The farm now produces several distinct lots, each highlighting a different bean variety.
The Pink Bourbon variety is a rare cultivar that produces smaller yields than standard commercial coffee. The beans develop pink-hued cherries during ripening, a visual marker that helps growers identify the variety in mixed plantings. When grown at higher elevations, Pink Bourbon tends to develop concentrated sugars and bright acidity, characteristics that become more pronounced under light roasting.
This lot was processed and roasted to emphasize fruit-forward brightness alongside deeper chocolate notes. The beans arrive ready to grind and brew. Light roasting preserves the origin character and varietal distinctiveness, bringing out flavors that darker roasts would mask.
